With the caveat that I haven't done any of this 
because it's way down a very lllooooooonnnnggg 
list of things to do ...

If you go to 
http://www.apple.com/server/documentation/ you 
will find loads of OS X Server docs. I think the 
one you want is Open Directory Administration 
where you will find details of what does what - 
and what options are available to configure (it's 
mostly Ldap based).
