can I let all winbindd processes accept connections like nginx does

You should import the new winbind_struct_protocol.h from the
new Samba version and that should be it.

Sorry, no. It's possible, but it's not planned in an
upstream release. There are also critical fixes in the
winbind<->DC connection code coming soon which won't be
backported either. So upgrading might be interesting for you
for several reasons.
