Sure. Just edit /boot/grub/grub.cfg
The line you are looking for is something like:
menuentry 'Ubuntu, with Linux 2.6.32-28-generic' --class ubuntu --class gnu-linux --class gnu --class os {
However I'm not sure what will happen when it tries to do a kernel upgrade.
Presumably it will get overwritten.
I'm sure there is an easier way to manage this, but I'm not aware
of an easy way to rework the script.
