Apologies for the thread necro, but I found this today while answering this same question elsewhere:

Describes how to set window vs icon titles when using Xterm, with sample code for zsh, bash, tcsh and ksh.

Note that with the "preexec" function available to zsh, you can set the window title to be whatever program you're running (eg: "alex at host: ~ - vi .zshrc").

These tips work just fine for the default terminal in Ubuntu.
