Its pretty normal to ask people you're taping to sign a consent form. I
don't know if its legally required in Australia, but it seems polite. At
previous LCAs this consent has been implemented as a checkbox on a web
form, so it doesn't have to be onerous.

Perhaps just a bit of paper people sign which says "I am cool with being
taped"? Get them to sign before the camera is turned on at the start of
the talk...
