I think the important thing is console support, regardless of whether its
the VGA one or some other useful console device (eg, a serial or usbserial
console).  Bad things can happen when you don't have a console.
Been there, done that.  :-)

Another option I always turn on is magic sysrq, particularly if you don't
use a journaled filesystem its nice to be able to reboot from a hazardous
situation without forcing a fsck (if one is not required).  It's also
handy to be able to kill off troublesome processes when you can't get a
shell for some reason.
