Using your sanitisation, 'my.windows.domain' is your DNS domain, so
your REALM will be 'MY.WINDOWS.DOMAIN' and the NetBIOS domain is 'MYDOM'

That is correct, the change happened at Samba 4.8.0 and you must run
the 'smbd' and 'winbindd' daemons on a Unix domain member. The 'nmbd'
daemon is now only required if you need SMBv1.

That is probably because of your borked smb.conf.
