I tested this (after I gave it a coat of thinking) with the OPs initial
smb.conf that I modified, I ran this:

smbclient -NL localhost

Which returned this:
Bad SMB2 (sign_algo_id=2) signature for message

You cannot do signing with a guest user.

I missed it first time around.
