Nah, instructions are there to to make sure we have the right versions

Not if you don’t want to, it’s a choice, you can use it to lock samba on the repo.
And the why pinning.
you can do it without, but if you run : apt-get dist-upgrade -t bullseye-backports.
You get a new 5.10 kernel and other parts you might not want in your upgrades.
*( as stated on the debian websites on pinning.)
