Nothing wrong with your apt files, but I have tracked the problem done, 
though not with a fix yet 🙁

When you try to upgrade from the Ubuntu Samba to Louis's Samba, the 
actual 'samba' package isn't upgraded:

The following packages will be upgraded:
   libldb2 libnss-winbind libpam-winbind libsmbclient libwbclient0 
python3-ldb
   python3-samba samba-common samba-common-bin samba-dsdb-modules samba-libs
   winbind

Going off to read about 'apt pinning' to see if this will help.
