For me this way wil run

chmod -R 700 Lukas\ Christen/
chmod -R 700 Maurizio\ Caloro/

so the User will only see the own folder, and not more

You are using SMBv3

The guest user on Windows has nothing to do with the Samba guest user and
this may be where you are going wrong, so can you post the output of
'testparm -s' from the fileserver.
