I've hit some similar trouble, see my posts:

To make a note, i've recently upgrade to samba 4.8 and this behaviour
persist, and seems very similar to yours: if winbind 'lost' connection
to the DC, it takes 'some time' to reconnect; in the meantime,
winbind-based user providers (wbinfo, NSS, ...) return 'user unknown'.
