[Samba] How to change the server info/version which Samba returns to the client?

You can change the version-Debian yes. 
But you need to rebuild you samba for it. 

Run : apt-get source samba 
cd samba-.... 

Edit VERSION
You see somethine like this.

SAMBA_VERSION_VENDOR_SUFFIX=Debian
SAMBA_VERSION_VENDOR_PATCH=

If you are concerned about that, why did you even start nmbd and are you allowing network browing.
