To a certain extent it depends on the version of Mac OS. Pre OS X you
need AFP support on the server or to add SMB client support on the
Mac, with OS X you can still add AFP support to the server or use the
built in SMB client.

For Linux AFP support see Netatalk. Note that this stores files
differently to how OS X does it via SMB, for an alternative that does
it the same way see Baltra.

For SMB support for pre OS X Macs, see Dave (commercial from Thursby
Systems ?).

OS X has built in SMB client so can talk directly to an SMB server (Samba).

You could also consider NFS, but unless you have good control over
the clients it is insecure.
