There is a recycle bin VFS module that will ship with Samba 2.2.4,
due out soon (weeks or so).

It is based on work by  Brandon Stone, Amherst College, <bbstone at amherst.edu>
but modified to be a plugin Samba module (available on a per-share basis).

This will do exactly what you want.
