dos charset - dos codepage used by clients
unix charset - character set used in your unix system
display charset - character set used in programs which display information to 
the user (e.g. smbclient)

This is what my smb.conf starts with:

[global]
        dos charset = 850
        unix charset = ISO-8859-15
        display charset = ISO-8859-15
