Sounds goot but I do not need 'one' backup folder. Not an iso.
What I actually mean is that there is a identical clone of the current mail
server.
May be I could run rsync off a bootdisc.

Yes. In fact we offer that to our customers as a service, in the event of
disaster or machine failure. You'll want to use chroot to "run" the backed
up instance.
