What is the recovery process? Are the documents you fetch by WebDAV the kind of thing that you can open up in (standalone) Microsoft Office on a desktop computer?

If so, the “mount the WebDAV then rsync to local” seems sensible. There are a number of “snapshot” style backup options out there based on rsync (i.e.: do a recursive hard link copy of the directory tree, then rsync over the stuff that has changed). The first one that springs to mind is “rsnapshot” which likely has a package in your favourite distribution’s library.
