I would consider going as far as a distribution with effort put in to
ensure disks aren't meddled with. 

For eg, finnix is one of my favourites, and now has a forensics mode...

It also has dd_rescue, and likely enough other tools to get going with
too. Using an arguably unfamiliar distro (though finnix is debian based
fwiw) has it's own dangers of course...
