I guess one option could be doing a presentation on open document 
standards. Ive been haing a look at what various teams have done, and it 
varies greatly.
For instance FSFE FFII Berlin did the following:

"People from the Fellowship <http://www.fsfe.org/> of the FSFE 
<http://www.fsfeurope.org/> and from the FFII <http://www.ffii.org> in 
Berlin will celebrate the Document Freedom Day by congratulating the 
Federal Foreign Office <http://www.auswaertiges-amt.de> in Germany for 
their work to use and promote open standards. We will meet with the head 
of the IT department and hand over a book and a letter to the Federal 
Minister for Foreign Affairs and Vice-Chancellor Frank-Walter 
Steinmeiner as well as a cake with the DFD logo. "
