Adam,
I know that MS changed things radically with Vista (they put in their
own bootloader, changed partitioning rules and probably more).
I tried to move a Vista install last year and failed.
I wanted to increase the size of the first partition, Vista in the
second (Ubuntu in third). Spent many weeks and countless hours.
I suspect they've gone further down this path with Win-7, especially as
they've introduced "Hyper-V".
Good luck with this.
Please tell the list if you ever find a solution.

PS: If you can repair your Win-7 install, you might be able to add
Ubuntu to the Winders boot-loader and stop using grub.
I recall finding a free Vista tool that added Linux to the Winders
bootloader. Perhaps that's been updated for Win-7.
