I am not expert on PDFedit, havng only used it a few times. 
PDFedit provides a GUI interface. Highlight text and
change the text using the text input box (top left).
Use Page->add text, to add text to a box drawn by holding the left mouse
button.

Perhaps, your PDF document does not allow edits?
