Hey Jason,
In addition to the tips already mentioned, if you are happy to go with a non debian based distro you might give Puppy Linux a go - I've run it on many an older box just fine. Still wish ubuntu would take a lesson from some of the wizards go that.
Otherwise yeah gnome is somewhat bloated, though the situation is improving with the increasing range of mobile devices using gtk. (including nokia with their internet tablets and until recently openmoko).
