OK, I'll bite. I haven't been paying much attention in recent times,
so if this has been done or sounds too boring then please say "thanks
but no thanks"... :-)

I recently bought a couple of Buffalo Linkstation Pro NAS boxes.
They're neat little ARM-based boxes with a 500GB SATA disk and a
couple of USB ports - they only draw about 20W of power. Following
some instructions in the Linkstation Wiki and being a bit creative
I've now set them up as a pair of rsync-based backup servers, running
Debian Etch, for a bunch of other Linux machines that I have. The
plan is for one to live inside the house and be the backup
machine... and the other to live in my (detached) garage, pull the
data off the first every night... and serve as a (nearly) off-site
backup.

peace & happiness,
martin
