I started using LVM because I had a file server that I intended to grow
in the future. I now use LVM on all my systems because it allows me to
better fiddle with the partitions, even if I haven't found the need
yet. I also use it on my laptop because it allows me to do funky
encryption stuff.

LVM works for me and doesn't seem to have any downsides, so I'm sticking
with it. For a desktop system there isn't much of an upside either
though, so it probably boils down to a question of whether or not you
want to try something new.
