Hat trick!

The mencoder program, that comes with mplayer, can read any format that 
mplayer can, and can output in a few popular codecs.  It can usually do 
'passthrough', so it should be able to dump your stream untouched.

I know I've been saying the answer is mplayer - the question is 'how do 
I make it work?'  The manpages are mainly for developers and the 
frontend is limited.

The best way to deal with it is to page to the end of the manpage and 
cut'n'paste the examples.
