Videolan has the option of saving the stream as a Mpeg PS as well. 
(also AVI which is pretty crappy)

I have tried that too. I think I might be able to use it to save as 
separate video and sound streams as well, but the help files are a bit 
vague on that.

There are a few Windows utilities dedicated to the ripping and copying 
of DVDs, and some documentation which I have read as well.

I could only find one player for linux, OMS which was accompanied with 
a documentation labelled "Do not use this file it is out of Date", 
which sort of discourage me.

What are the linux DVD writing utilities ?

I think I need a utility that will read in my MPEG files, and create a 
series of 1Gb .VOB files, and the .IFO file.

I'll have a look at the mplayer stuff.
