Perhaps not always considered simple, but it's widely considered the best
for backups:
Amanda: http://www.amanda.org/

And for using Amanda to back up to CD-R, CD-RW, DVD+RW instead of tape:
CDRW-Taper module: http://www.tivano.de/software/amanda/index.shtml

On Debian:
apt-get install amanda cdrw-taper

I use this solution for my backups.

Plus the Debian maintainer for cdrw-taper is just such a nice guy. ;)
