It basically resets the modem to the settings which have been stored
in it. I suspect modifying the registers (ATSxx) is not persistent
without issuing another command, but it's been a long time since I've
played with this stuff. The quick fix is just to continue issuing
the ATS91 line after ATZ in your chat script.

Maybe someone else here can shed better light on the situation.
