I would start with something hard, like Debian, or my favourite, Slackware. If you have the patience you can learn a lot about how to manage a system by trying all those things you want to do. After a while, when you feel you need to know a bit more about how the system hangs together, try linux from scratch. That's what I use now and all I can say is: Speed baby, Speed! Not to mention recent (< 3 month) old software.
