Edit /etc/inittab 

change the line id:5:initdefault: to id:3:initdefault 

This sets the default run level to 3 (basically the same as 5 but boot into a 
console instead of a GUI).

This is RedHat's config, but I think that's the generic way to do things and 
RedHat haven't messed with it. I could be wrong though...

If it is different, it shouldn't be too hard to find which entry corresponds 
to the default run level and change it to 3.
