You have a fundamental misunderstanding about how Roaming Profiles in 
Windows works.

Roaming Profiles are a feature of Windows clients, not Windows Servers. 
Servers accommodate them, but Samba just tells the Windows Client where 
it wants to put the Windows Profile.

Linux Clients have no such facility for replicating a user's Home Folder 
to a Samba Server like Windows Clients do it. (Sorta.)

There are a few work-around solutions.

You can use pam_mount to mount the remote filesystem, on the local 
workstation. If you lose access to your server, that's bad. It's also 
bad for backing things up, and not what Windows does.

The other way you can do this, is using NextCloud, and just telling the 
NextCloud Client to use Samba Authentication, and replicate everything.
